The fruit comes from the sunlit Languedoc-Roussillon region in southern France, where limestone, schist and clay soils help create brightness, texture and quiet mineral tension. Early harvesting protects the acidity that keeps the wine crisp and lifted.
Chardonnay, Colombard and Fine Lees
Chardonnay brings structure, citrus and elegance. Colombard adds green apple, aromatic freshness and a lively mid-palate. After fermentation, the wine matures on fine lees for twelve months before alcohol is removed at low temperature to preserve its delicate aroma.
